3 cups leftover turkey, cubed or shredded
2 cans (14-1/2 oz. each) Cajun seasoned stewed tomatoes
1 bell pepper, chopped
1 onion, chopped
1 clove garlic, finely minced
2 cups cooked rice
Combine first 5 ingredients in a large skillet. Cook for 15 minutes over med/low heat, stirring frequently. Add rice; cook until heated.

3/4 cup shortening or oil
3/4 cup cocoa
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
2 teaspoons vanilla
4 eggs
Confectioners' sugar
Melt together shortening and cocoa. Stir together flour, baking powder and salt. Add sugar to cocoa mixture, stirring until smooth. Add eggs one at a time, beating well after each. Add vanilla; add flour mixture and blend thoroughly. Chill dough at least an hour (two or three days is fine, too). Form dough into small balls. Roll in confectioners' sugar, and bake on greased cookie sheet at 375 degrees for 10 minutes.
