3-4 pounds chili meat
2/3 cup flour
2 tablespoons salt
1 tablespoon black pepper
2 tablespoons shortening
Mix the above ingredients except shortening until all the flour is worked into the meat. Heat shortening in heavy pan. Add mixture and saute' slowly, stirring so meat will cook thoroughly, but will not get too brown.
ADD:
2 medium onions, chopped
2-3 tablespoons garlic, chopped
Let cook together until onion and garlic are soft. Add 2 quarts of hot water and simmer 1 hour:
ADD:
3 tablespoons paprika
2 tablespoons powdered cumin
3 tablespoons chili powder
3 tablespoons Morton's Chili Blend
2 small cans tomato sauce
Simmer for about an hour, stirring often. Add additional salt and Tabasco to taste.
